Today my tip is a simple one!

How to store cupcakes;
Cupcakes do not need to be stored in the fridge, in fact it can be detrimental to the cakes taste and texture. The fridge is going to suck all the lovely moisture out of your beautiful little sweet and your going to end up with a horrible rock!

Most buttercreams are fine out of the fridge, but if you really feel that you have to put your cupcake in the fridge let it come back to room temperature before eating. Otherwise you can store your cupcakes in an airtight container for up to 2 days.

The only time you should not keep them in an airtight container is if the are decorated with a fondant topper, as your fondant will turn into horrible sticky melted goop! So it's best to decorate just before serving.

Madison's 1st Birthday

Today is my hubby's cousins daughter Madison's 1st birthday, what a mouth full!

She had a beautiful little party and of course there where cupcakes, pretty pink girly cupcakes.

I really enjoyed making these, especially the little princess crowns.


We had gluten and dairy free cuppies with orange buttercream and apple spice and vanilla cuppies with vanilla buttercream.

Whoa and I have a full on weekend ahead of me, I am going to be spending the rest of this week making toppers and writing lists to make sure I am extra organised. Stay tuned tomorrow for Tuesdays Tip!

Ever had trouble filling your cupcake papers evenly, or dripping batter all over the tray??


This Tuesday’s tip: Use a spring release ice-cream scoop to fill your papers. You will get the exact amount of batter in each paper minus the mess!


Now onto some super exciting Cupkates news! I have a food licence people!! I will be doing all my baking in a commercial kitchen and am moving forward full steam ahead. I have been inundated with orders and quote requests, I am completely gobsmacked. Finally all my hard work is paying off.

I have a very busy few weeks ahead of me, all of which you will see on my blog. Thank you to everyone who has followed my journey right from the early days, to my awesome experience at Planet cake, to the beginning of my new business. And welcome to any of my new friends, I hope you stay awhile and enjoy!

So I was thinking last night, I don't have any planned cupcakes for 2 weeks and I can't leave my blog for that long!

I have finally started taking more care of my little blog and updating that I need to keep it going. So I figured I might start a weekly post with some baking tips.

I get a lot of people asking me for baking help so why not?

So let's start at the very beginning,

1. Read through the entire recipe including method before beginning. In my early days I was caught out more then once when I got to the part in the recipe that said, leave to set overnight...hmm so we won't be eating this for afternoon tea then! :o)

In addition to that

2. Get out all your ingredients and measure/weigh before beginning. That way you won't get caught out in the middle of baking when you realise you have no flour or not enough sugar.

And remember to have fun..and it's ok to make mistakes that's how you learn!

1st Birthday's

1st birthday cuppies for a little girl, Samantha.

I will be enjoying a lovely break next week with no cuppies to be baked! But plenty of fondant toppers to be handcrafted for a busy few weeks to follow.

I can't believe my Spencey-roo is now 2 years old! He absolutely adores Toy Story and I wanted to attempt to ganache and cover a cake so this is what I came up with.


The cutting cake is chocolate mud with layers of chocolate ganache...so moist and delish! And the cupcakes are Vanilla Cake with Vanilla butterecram. The toppers are Woody's hats and boots and Buzz's spaceship.

Spencer was so excited about his "story" cake and that's all I needed to make me happy! He had an absolutely fantastic time at his party and was very spoilt with his beautiful presents.

Remember recently I donated some cupcakes for a Relay for Life fundraiser? Well the Relay for Life was run this weekend in Cairns and one of the participants in my friends team was celebrating his 30th birthday.


Being a pilot he likes all things planes, cupcakes are no exception! I really liked how these turned out, it was good to practice the clouds as I will be making some for a very special birthday cake this week!!


And this chocolate love buttercream is sooo yummo, it tastes like chocolate mousse!

I have a big week coming up with my beautiful baby boy's 2nd Birthday and a 1st birthday order on Sunday.

Country Cupcakes

These chocolate lover cupcakes where created for my sister-in-laws friend. It's her birthday today.


The theme was purple, country, girly pretty flowers and bows...hmmm I think I pulled it off.



I love the little cowboy hats! Will be making them again for Spencer's toy story cuppies, can't believe my baby is nearly 2.
